I’m always looking for more ways to sneak veggies into my body and this has got to be one of my all time favorite healthy recipes. I am updating it with more clear pictures and a few variations including a whole 30 swap.

I make this Broccoli Slaw to have for lunches all week, as a meal in itself, or for a side with rotisserie chicken or sausage. It’s super yummy.

You can make it ahead and it holds up well so it’s a great option for potlucks and picnics.

Besides that it is SO quick and easy to throw together.

Ingredients for the Broccoli Ramen Salad

The recipe is flexure you can easily tweak it depending on what you have on hand and your family’s personal preferences.

Also see below for a variation to make it without sugar and whole 30 compliant!

  • 1/4 C Veggie or Light Olive Oil
  • 1/8 C White Vinegar
  • 1 TSP Sugar
  • 1/8 tsp Pepper
  • Packet Ramen seasoning that comes with the noodles (see seasoning pack substitution below)

How to Make Broccoli Slaw

I’d say you want to make this at least 2 hours before serving just to give the noodles time to absorb the dressing. I think the ideal window is 2-24 hours but I have served it within 15 minutes and 3 days later and it was still super yummy.

The longer it sits the softer the noodles and nuts become. It’s still yummy but I prefer more crunch and texture if that makes sense.

  1. Mix the first 5 ingredients together to make the dressing.
  2. Add the rest of the ingredients and toss.
  3. You can serve it immediately or keep it up 2-3 days. I like to wait at least a couple of hours to eat it. The longer you wait the softer the noodles will be. It’s just a matter of preference.

THE BEST BROCCOLI SLAW RECIPE

Course Side Dish

Delicious Broccoli Slaw recipe from Rae Gun Ramblings. Light and perfect for warmer weather and pot lucks. Eat it as a main dish or as a side.

Ingredients

  • 1/4 C Veggie or Light Olive Oil
  • 1/8 C White Vinegar
  • 1 TSP Sugar
  • 1/8 tsp Pepper
  • Packet Ramen seasoning that comes with the noodles see seasoning pack substitution below
  • 1 Pack Ramen Noodles uncooked and crushed (see Whole30 substitution below)
  • 16 oz Shredded Broccoli/Broccoli Slaw
  • 1/2 C Slivered Almonds
  • 4 Green Onions sliced

Instructions

  • Mix the first 5 ingredients together to make the dressing.

  • Add the rest of the ingredients and toss.

Even Healtier Substitutions!

  • Now a days I’m alittle wary of that Ramen packetso I have been substituting the ramen seasoning pack fora combo of salt, garlic powder, and onion powder to taste.
  • I enjoyed this while doing the Whole 30 eating plan by substituting the seasoning pack as described above, swapping the noodles for 1/2 C compliant roasted sunflower seeds, making sure to use a compliant oil, and swapping the sugar out for 100% juice (I tried both passion fruit and apple juices and they both worked great)
  • Want more protein sometimes I’ll add in edamame beans or for a full meal toss in some chopped up chicken.

Whichever version you pick, I hope you try it this is one of my favorite recipes we eat it all the time. It’s full of healthy veggies and for some reason even the kids ask for seconds of this one!
