Italian Chicken Potato and Green Bean Bake is the most popular recipe on my site, and it was ffffaaaaarrrrr overdue for a republish. The old pictures didn't do it justice, and I have slightly tweaked the recipe from the original post.

Italian Chicken Potato and Green Bean Bake is still just as delicious as the first time I made it. I love that all the components of the meal are in one casserole dish. Easy prep, easy clean-up, and great leftovers. All the parts of a winning dish.

Like I said, I have made a few adjustments to my Italian Chicken Potato and Green Bean Bake since posting and have updated the recipe to reflect the changes.

Originally, I was using 2 packets of seasoning because 1 was not enough, but sometimes I felt 2 was a touch salty so I decreased it to 1 ½ packets. I also originally decreased the butter to ¾ stick, but have found the potatoes have cooked more consistently with the entire stick....of course....isn't that the way life seems to work sometimes.

I put in a few recipe notes based on questions from readers, but if you have any issues or questions please send me a message or comment.

I know some of you have concerns about chicken cooking properly to temp and want to cut into that chicken breast, and I again tell you to stop and get a meat thermometer! I recommend TermoWorks TermoPop. I have used it for years and love it.

What can make it all a little easier? Easy dinners. Seriously.

Feeding the masses in a quick way with something they love makes life easier and, like I said before, Italian chicken potato and green bean bake fits the bill. There is a reason that is the most popular recipe on this site, and great for your school night recipe rotation.

What You Need To Make This Recipe

  • Boneless Skinless Chicken Breasts - Thighs work as well, but will require less cooking time. Make sure that the potatoes are cut smaller if using thighs so the dish bakes evenly.
  • Green Beans - Fresh or frozen green beans can be used. However, frozen will result in additional liquid in the baking dish. I recommend thawing and patting off excess liquid before baking.
  • Red Potatoes - Sometimes potatoes make take a little additional time depending on the size of your quarters. If you are working with larger potatoes adjust and cut into eighths.
  • Butter - Olive oil can be used in place of butter, but the flavor will be slightly different. It can be used on a 1:1 ratio.
  • Italian Dressing Seasoning - This is a dry seasoning packet and not a liquid bottle.

Ingredients

  • 4 cups generous cups red potatoes, quartered
  • 2 cans cut green beans, drained
  • 1-1 ½ lb chicken breasts, 4 chicken breasts
  • 1 stick butter, cut into pieces
  • 1 ½ Italian dressing seasoning/mix packets

Instructions

  • Pre-heat oven to 350 degrees.

  • Line one side of the pan with green beans. Cut potatoes up. Line opposite side of pan with the potatoes. Line the chicken breasts down the middle of the baking dish. Cut butter up and layer over the green beans, potatoes and chicken. Sprinkle Italian dressing over the entire pan.

  • Cover with foil. Bake 1 hour.

Notes

      I think that would work. My co-worker subbed in olive oil and used the seasoning packet and said it turned out great. I would not use a lite or fat free.

      Absolutely! I would do a quick blanch before baking, but that step could be skipped if you want a little crunch to them.

          I have not tried that, but I wouldn't advise it because it will result in a lot of excess liquid. The cooking time will also be different.

      I don't see why you couldn't. I am not sure on that the texture will be like with an hour cook time. Might be a bit mushy.

    What would the cooking adjustment time be if I used chicken thighs instead?

      It probably will not need to cook as long. I would make sure my potatoes are on the small side and use a meat thermometer to temp the chicken. Since the thighs are a bit smaller I would check around 40 min for a temp and go from there.

      You can use corn. I am not sure on cooking time, but I don't think so because the largely is due to the chicken.

      I have used 1 can of green beans and 1 can of corn. Cooked it for the hour and turned out great. I have used the recipe almost every week. My husband always take the left overs to work the next day for lunch. Thanks for sharing this recipe!

      I have never tried it as a freezer meal. I think you could, but you will want to adjust cooking times. I think you also will get more liquid in your pan and it will change the texture of your veggies.

      I have never tried this with frozen chicken. I think your cook time would be different and it might have a lot of liquid. I would also worry about how evenly the chicken would cook. I don't think it would turn out as well.

      No. You might have extra liquid because of the frozen veggie.

      The chicken tenderloins are smaller and your cook time will likely be shortened for the chicken. However, the potatoes will likely need to entire time to be tender.

    I stumbled upon this recipe by accident and I am glad I did! Made it for dinner this evening and it was a HUGE hit! Had it put together and in the oven in a matter of minutes.     I made this dish tonight for dinner and it was delicious! Unfortunately, I didn't follow your instructions and only used 1 packet of dressing mix. It was still great but next time I will use the 1 and 1/2 packets specified in your recipe. The chicken came out so tender and juicy. We loved it and will be adding it to the rotation.         I have made this in the slow cooker before. There is more liquid if you are using frozen meat and veggies, but it is tasty. I would cook on low 6-7 hours.

      I have not tried this, but I imagine that you can. I think you will have more liquid in the bottom of the pan with squash and zucchini, but the flavors will be good.

      I have not, but I think you could do that once it is cooked. The integrity of the veggies will change once frozen, but the flavor will still be good.

      Not with this recipe. You could add additional pepper if you would like, but there is a good amount of salt in the ranch seasoning.
