  2. Add half of the heavy cream and mix for another 2 minutes. Let the bowl sit for 3-5 minutes, as erythritol in its granulated form requires a little extra time to dissolve.
  3. Add the other half of the heavy cream and mix on medium speed for 3 minutes until the mixture is thick with firm peaks.

  6. I just made these now but I didn’t have little tins. I piped them onto cookie sheets and threw them in the fridge. Do they harden enough to stay separate so I can remove them and place them all in a bag or should I freeze them to do that? Btw, they look great and seem to taste great from the spatula. Thank you.
