I know casseroles aren’t sexy, but they are typically foolproof, delicious, comforting, and can be easily proportioned for future keto lunch or dinners and even frozen! So while you may not serve some of these keto casserole recipes when your boss is coming for dinner (do people still do that?? *shrugs*) they are definitely the kind of convenient and satisfying recipes that will keep you cruising on low carb until you reach your goals.
